  • 10 Tbsp Water (150ml)
  • 5 Tbsp Sugar (75g)
  • 2 Coffee Mix packets (Instant coffee can be used)

First, soak the walnuts in lukewarm water for about 5 minutes to soften them. Gently rub them while washing to remove any debris or shell fragments, ensuring a cleaner end product. Rinse thoroughly with clean water until the water runs clear, then drain them well in a colander.

Pat the drained walnuts completely dry with paper towels. Now, place the walnuts in a dry pan and toast them over medium-low heat. Toast for about 10 minutes, stirring occasionally, until all moisture is gone and the walnuts feel completely dry to the touch. This step helps remove any raw taste and enhances their nutty flavor.

Spread the toasted walnuts out evenly to cool down completely. It’s important to let them cool before proceeding to the next step, as using them while hot can cause them to clump or burn.

Now, let’s make the syrup for the candied walnuts. In a saucepan, combine 10 tablespoons of water, 5 tablespoons of sugar, and 2 coffee mix packets. Stir well. Once placed over low heat, do not stir; allow the sugar to dissolve on its own. Once it starts boiling, it will dissolve.

Once the syrup begins to boil, turn off the heat. Add the cooled walnuts and mix them thoroughly with the syrup until evenly coated. Then, turn the heat back on to medium and stir-fry for about 2-3 minutes, allowing the syrup to thicken and coat the walnuts into a sticky glaze.

Once the walnuts are coated and the syrup has reduced to a sticky glaze with no excess moisture, spread them in a single layer in your air fryer basket. Air fry at 200°C (392°F) for 10 minutes. This process will result in wonderfully crispy and nutty candied walnuts! Let them cool completely before storing in an airtight container to maintain their crispiness.
