Let’s have a relaxed and leisurely weekend lunch! I initially planned to just make nurungji, but I ended up making a salad too for a more satisfying meal.

Nurungji Ingredients

  • 1 cup Nurungji (scorched rice)
  • 4 cups Water
  • A little Dried Anchovies (for broth)
  • A little Dried Kelp (Kombu)

Cooking Instructions

In a deep pot, combine 1 cup of nurungji, 4 cups of water, a small amount of dried anchovies, and a piece of dried kelp. Bring to a boil over medium heat. The key is to simmer them to create a flavorful broth. Once it boils, continue to simmer for about 10-15 minutes until the nurungji softens. After the broth has infused, remove the anchovies and kelp, leaving behind the milky nurungji broth. For an extra hearty texture, you can also add cooked rice and boil it together.

Heat a small frying pan with a generous amount of vegetable oil. Fry two eggs to your desired doneness, aiming for a runny yolk (sunny-side up or over easy is recommended). Be careful not to break the yolk when serving. These eggs will add a rich, creamy element when mixed into the nurungji.

Prepare your mixed greens. You can use pre-packaged salad mixes or select your favorite greens like lettuce, baby greens, and romaine. Wash them thoroughly and then drain them very well. Excess water can make the salad soggy and dilute the dressing.

Let’s make a delicious salad dressing! In a small bowl, whisk together 1 tablespoon of olive oil, 1 tablespoon of vinegar (apple cider or balsamic vinegar adds a nice flavor), 1 teaspoon of sugar, and 1/2 teaspoon of minced garlic. Whisk until the ingredients are well combined and emulsified. Taste and adjust the sugar or vinegar to your preference.

Arrange the drained mixed greens attractively on a large plate or in a bowl. Place the freshly fried eggs on top of the greens. Drizzle the prepared dressing evenly over the salad. Finally, sprinkle with toasted sesame seeds for added flavor and texture. This fresh salad, paired with warm nurungji, makes a wonderfully balanced and satisfying meal. Enjoy!
