First, thoroughly wash the albaegi cabbage with water. Making shallow cuts on the white stem part of the cabbage will help the seasoning penetrate better and make it more tender when cooked. Make cuts about every 0.5 cm, not too deep.

Now, let’s prepare the batter that will make the cabbage pancakes crispy. Mix the tempura flour and pancake mix in a 1:1 ratio. Add a pinch of salt for a subtle seasoning. The batter should be slightly thicker than pancake batter, not too runny or too stiff. It’s best to add water gradually while adjusting the consistency.
