Lotus root is packed with potassium, aiding in sodium excretion, and contains mucin, which protects the stomach lining, acting as a natural digestive aid and helping prevent constipation. Simply put, it’s incredibly good for you! However, many find it difficult to incorporate into their diet, especially children. By adding delicious cheese, we can transform this healthy root vegetable into a wonderfully crispy lotus root dish that both kids and adults will adore! How does that sound?
Ingredients- Lotus root 100g
- Mozzarella cheese
- Salt 3-4 pinches
- Parsley flakes
Cooking Instructions
Step 1
First, peel the lotus root thoroughly. Then, slice it thinly into approximately 0.2cm thick rounds. Slicing them thinly is important, as thicker pieces will take longer to cook.
Step 2
Place the sliced lotus root in a bowl of water with 1 teaspoon of vinegar for about 5 minutes. This step helps to remove any bitterness and prevent browning. After 5 minutes, drain the lotus root slices and pat them completely dry with paper towels.
Step 3
Heat a non-stick pan over medium heat. Once the pan is warm, place small spoonfuls (about 1/2 tablespoon each) of mozzarella cheese onto the pan, spaced apart. This cheese will act as a binder for the lotus root.
Step 4
Immediately place the prepared lotus root slices directly on top of the melting cheese. Evenly sprinkle 3-4 pinches of salt over the lotus root slices, followed by a dusting of parsley flakes for added flavor and color.
Step 5
Continue to cook over medium-low heat. Once the cheese begins to melt and lightly set, helping to hold the lotus root together, carefully flip each slice using a spatula. Cook the other side until golden brown and crispy.
Step 6
