Ingredients- 2 small lotus root sections (approx. 200g)
- 2 Tbsp vinegar (for blanching lotus root)
Dressing Ingredients- 2 Tbsp sesame seeds
- 1 Tbsp minced garlic
- 2 Tbsp mayonnaise
- 2 Tbsp 2x concentrated vinegar
- 1/2 Tbsp stevia (or 1 Tbsp sugar)
- 1 pinch salt

Cooking Instructions
Step 1
First, wash the lotus root thoroughly and peel it. Since it’s for a salad, slice it thinly into rounds. Thin slices will enhance the crunchy texture and allow the dressing to penetrate better, resulting in a tastier salad.

In a pot, add enough water to cover the lotus root, then add 2 tablespoons of vinegar. Once the water begins to boil, add the sliced lotus root and blanch for about 1 minute. Blanching with vinegar helps prevent browning and maintains the lotus root’s crispness.

After blanching, rinse the lotus root lightly under cold water and drain it completely. Ensuring all excess water is removed will prevent the salad from becoming watery and bland.

Take 2 tablespoons of sesame seeds and coarsely grind them using a mortar and pestle or by placing them in a plastic bag and rolling over them with a rolling pin. Using freshly ground sesame seeds will add a richer, nuttier flavor.
