A ‘Must-Try’ Delicious Side Dish: Spicy and Savory Korean Chili Pepper Salad!
I’ve made a delightful soybean paste salad using crisp Korean chili peppers! These peppers, surprisingly, are quite the appetite stimulant, perfect for enjoying with rice. This simple yet flavorful dish adds a vibrant touch to any meal.
Ingredients- 7 Korean chili peppers (Asakyi)
- 1 Tbsp soybean paste (Doenjang)
- 1 Tbsp red chili flakes (Gochugaru)
- 1 Tbsp plum extract (or corn syrup)
- 1/2 Tbsp sugar
- 1.5 Tbsp sesame oil
- 1 Tbsp toasted sesame seeds
Cooking Instructions
Step 1
First, prepare the Korean chili peppers. Trim off the stems and wash them thoroughly under running water. Then, chop them into bite-sized pieces (about 1 to 1.5 cm thick). It’s important to chop them to a moderate thickness to maintain their crisp texture, as cutting them too thin might release a raw taste.
Step 2
Now, it’s time to make the delicious seasoning. In a bowl, combine 1 Tbsp of soybean paste and 1 Tbsp of red chili flakes. Add 1 Tbsp of plum extract for sweetness and 1/2 Tbsp of sugar. You can adjust the sweetness to your preference. (If you don’t have plum extract, corn syrup or honey can be used as alternatives.)
Step 3
Mix the prepared seasoning ingredients well with a spoon. Ensuring the soybean paste is smoothly incorporated without lumps is key to the flavor. Once the seasoning is smoothly blended, add 1.5 Tbsp of sesame oil for a nutty aroma and 1 Tbsp of toasted sesame seeds, then gently toss again. Adding a generous amount of sesame oil here will enhance the rich flavor.
Step 4
Finally, add the chopped Korean chili peppers to the seasoning bowl and gently mix them in. The key is to toss them carefully so the seasoning coats the peppers evenly. Be mindful not to over-mix, as this could make the peppers mushy.
