Seasoning & Coating

  • 2 Tbsp Mirin (or Rice Wine, Sake)
  • 2-3 Tbsp Herb salt
  • 5-6 Tbsp Potato starch
  • 4 Tbsp Sunflower oil (or other cooking oil)

Cooking Instructions

Start by preparing your fresh mackerel. Thoroughly rinse the fish under cold running water, ensuring any internal blood or residue is removed. Pat it dry gently with paper towels.

Make shallow cuts (about 1-2 cm apart) on both sides of the mackerel. This helps the seasoning penetrate and ensures even cooking. Sprinkle 2 Tbsp of mirin (or your preferred rice wine/sake) evenly over the fish; this helps to eliminate any fishy odor. Next, generously season both sides with herb salt. If you don’t have herb salt, regular salt and pepper can be used. Let the fish marinate for about 10 minutes.

In a large bowl, place 5-6 Tbsp of potato starch. This will form a light, crispy coating for the mackerel.
