Duck Marinade

  • 3 Tbsp Low-sodium Soy Sauce
  • 2 Tbsp Oyster Sauce
  • 1 Tbsp Cooking Wine (e.g., sake or soju)
  • 1 Tbsp Plum Extract (Maesil Cheong)
  • 1 Tbsp Ginger Confiture (or grated ginger)
  • 2/3 Tbsp Minced Garlic
  • 1/2 Tbsp Finely Chopped Cheongyang Pepper (optional, for extra spice)

Cooking Instructions

Rinse the pre-cut duck meat thoroughly under cold running water. If there are any overly thick or unsightly parts of the skin, you can trim them slightly for a cleaner presentation. Season the duck pieces evenly with salt, cooking wine, and olive oil. Gently massage the seasonings into the meat, then cover with plastic wrap and refrigerate for at least 1 hour. This marination step helps to remove any gamey odors and enhance the duck’s flavor.

Drain any excess liquid from the marinated duck by placing it in a colander for a moment. Transfer the duck to a disposable plastic bag. Add 3 tablespoons of potato starch to the bag. Seal the bag securely and shake well to ensure the duck pieces are evenly coated with the starch. Coating with starch will help create a wonderfully crispy exterior when baked.
