- 25 Shrimp, peeled and deveined
- 1/2 cup Shredded Coconut (long type)
- 7 Tbsp All-Purpose Flour
- 2 Eggs
- Pinch of Salt
- Pinch of Black Pepper
- A little Cooking Oil (for spraying)
Dipping Sauce
- 3 Tbsp Mayonnaise
- 1 Tbsp Sugar
- 1 Tbsp Corn Syrup (or Oligosaccharide)
- 1 Tbsp Lemon Juice
- Pinch of Salt
- Pinch of Black Pepper

Cooking Instructions
Step 1
Begin by rinsing the shrimp under cold water. Remove the shells, leaving the tails intact. Make a shallow cut along the back of each shrimp to remove the dark vein (digestive tract). Rinse again and pat them thoroughly dry with paper towels. This step is crucial for the coating to adhere properly.
Step 2
Season the cleaned shrimp with a pinch of salt and pepper. You can optionally add a splash of cooking wine (like mirin or sake) to further eliminate any fishy odor. Let the shrimp marinate for a few minutes while you prepare the coating stations.
Step 3
Set up three shallow dishes or bowls: one with flour, one with the beaten eggs (seasoned with a pinch of salt and pepper), and one with the shredded coconut. Dredge each shrimp first in the flour, shaking off any excess. Then, dip it completely into the egg wash, allowing any excess to drip off. Finally, press the shrimp firmly into the shredded coconut, ensuring it’s evenly coated on all sides. Gently press to help the coconut stick.
Step 4
Preheat your air fryer to 180°C (350°F). Arrange the coated shrimp in a single layer in the air fryer basket, making sure they don’t touch each other. Lightly spray the shrimp with cooking oil. Air fry for 8-10 minutes, or until the shrimp are golden brown and crispy. You may want to flip them halfway through for even cooking.
Step 5
While the shrimp are cooking, prepare the dipping sauce. In a small bowl, whisk together the mayonnaise, sugar, corn syrup, and lemon juice. Season with a pinch of salt and pepper to taste. Serve the hot, crispy coconut shrimp immediately with the prepared dipping sauce for a delightful contrast of textures and flavors.
