You can achieve perfectly crispy on the outside and incredibly juicy on the inside chicken using just your air fryer, without deep-frying! This golden recipe is perfect for impressing guests or as a special meal.
Main Ingredients- 1.75 lbs (800g) Chicken pieces (suitable for stir-fry or stew)
- 1 cup Frying powder (approx. 100g)
Seasoning- 2 Tbsp minced garlic

- Generous amount of black pepper (to taste)
- 3 Tbsp cooking wine or soju (to remove odor)

Cooking Instructions
Step 1
First, rinse the chicken pieces thoroughly under cold running water and let them soak for about 10 minutes to remove any blood. After soaking, pat the chicken dry with paper towels. Make a few shallow cuts into the flesh of the chicken; this helps the seasonings penetrate better.
Step 2
To the dried chicken pieces, add the seasoning ingredients. Start with 2 tablespoons of minced garlic and 2/3 tablespoons of salt.

Next, sprinkle in a generous amount of black pepper and add 3 tablespoons of cooking wine or soju to help eliminate any gamey odors. Mix everything together with your hands, ensuring each piece of chicken is well-coated. (Tip: For extra tender and odor-free chicken, you can soak the chicken in milk for about 30 minutes before rinsing and proceeding with the recipe.)
Step 4
Place the seasoned chicken in an airtight container or a zip-top bag. Seal it tightly and refrigerate for at least 1 hour to marinate. This marinating step is crucial for tenderizing the meat and allowing the flavors to meld beautifully.

Now it’s time to coat the chicken for frying. Take a clean zip-top bag and add 1 cup of frying powder. Add all the marinated chicken pieces into the bag. Seal the bag and shake it vigorously, or gently toss the chicken, ensuring an even and thorough coating of frying powder on all sides.
Step 6
It’s time to air fry! Arrange the coated chicken pieces in a single layer in the air fryer basket, making sure they don’t overlap. Cook at 180°C (350°F) for 25 minutes. For even crisping, flip the chicken pieces halfway through cooking (around the 10-minute mark) and then flip them again towards the end (after another 10 minutes of cooking) to ensure golden-brown perfection on all sides.
