  • Ingredient Category : Pork
  • Occasion : Everyday
  • Cooking : Deep-fry
  • Servings : 1 serving
  • Cooking Time : Within 15 minutes
  • Difficulty : Anyone

Ingredients

  • Pork loin for tonkatsu, 200g
  • Salt, 2 pinches
  • Pepper, 2 pinches
  • Egg, 1
  • Frying powder (or all-purpose flour), 2 Tbsp
  • Panko breadcrumbs, 4 Tbsp

Cooking Instructions

Step 1

First, prepare the pork loin to your desired tonkatsu thickness. Place a sheet of plastic wrap over the pork loin, and gently pound it with a meat mallet or the back of a knife until it reaches your preferred thickness. Be careful not to make it too thin, and pound softly.

Step 1

Step 2

Season the pounded pork loin evenly on both sides with salt and pepper. This step helps to remove any gamey odors and adds a deeper flavor.

Step 2

Step 3

In a bowl, crack the egg and whisk it well with a fork or whisk until smooth. Having the egg wash ready beforehand ensures an even coating when breading.

Step 3

Step 4

Now, it’s time to coat the pork. Evenly dredge the seasoned pork loin in the frying powder (or flour) on both sides. Ensuring a good coating of flour helps the breading stick well and creates a crispier texture.

Step 4

Step 5

Next, dip the flour-coated pork into the beaten egg mixture, ensuring it’s thoroughly coated. Don’t apply the egg wash too thinly; make sure the entire piece of pork is well covered.

Step 5

Step 6

Finally, apply the panko breadcrumbs. Generously coat the egg-washed pork with panko, then firmly press the breadcrumbs onto the surface with your hands. Pressing firmly ensures the breadcrumbs adhere well, creating a beautiful, crispy crust.

Step 6

Step 7

Heat a generous amount of cooking oil in a frying pan or deep fryer to about 170-180°C (340-350°F). Carefully place the breaded pork cutlet into the hot oil and fry for about 4-5 minutes, turning occasionally, until golden brown and cooked through. This temperature ensures the inside cooks while the outside becomes perfectly crisp.

Step 7

Step 8

Once fried to a beautiful golden-brown color, remove the tonkatsu from the oil and place it on a wire rack or paper towels to drain any excess oil. This will help keep it extra crispy. Your delicious homemade pork cutlet is ready! Enjoy it with your favorite sauce!
