For my family who absolutely loves potatoes, I’ve made hash browns that both kids and adults will enjoy. This recipe offers a delightful snack, perfect for any occasion.

Wash the 4 potatoes thoroughly. Dice 2 of the potatoes into roughly 1.5cm chunks, and finely dice the remaining 2 potatoes into small, square pieces (about 0.5cm). Cutting them this way creates a more interesting texture.

Place the 2 larger-chunked potatoes into a zip-top bag along with 3 Tbsp of water. Seal the bag securely, then poke a few small holes in the top with a fork. This allows steam to escape during microwave cooking. Microwave on high for about 5-6 minutes, or until the potatoes are tender. You can check for doneness by piercing them with a fork; it should slide in easily.

Carefully transfer the microwaved potatoes to a large bowl. While they are still warm, mash them thoroughly with a fork or potato masher until smooth and lump-free. It’s important to mash them well to ensure an even consistency.

Add the mashed potatoes, the finely diced raw potatoes, 4 Tbsp of potato starch, and 1/2 tsp of salt to the bowl. Mix everything together to form a cohesive dough. Take portions of the prepared mixture and shape them into round, flattened patties of your desired size (e.g., about 5-7cm in diameter). Avoid making them too thick, as this ensures they cook through evenly and become nicely crisp.

Heat a generous amount of oil in a frying pan over medium-low heat. Place the shaped hash browns in the pan. Fry them for about 5-7 minutes per side, or until golden brown and crispy.
