How to Make Delicious French Fries at Home
On July 12th, it’s said to be the first day of summer heat (Chobok). We had a quiet Chobok, just enjoying some fruit as we had Samgyetang not too long ago. Since we have plenty of potatoes and onions at home, we’ve been making various dishes with these two ingredients. Today’s menu is homemade French fries! These crispy fries are perfect as a beer snack or a delightful treat.
Ingredients- 4 medium potatoes
- 2 Tbsp tempura powder (twigim-garu)
- Salt to taste
- Generous amount of cooking oil for frying
Cooking Instructions
Step 1
Wash the 4 potatoes thoroughly and cut them into fries, about 0.5 cm thick. It’s best not to peel them for a more rustic touch. Ensure the thickness is consistent for even cooking.
Step 2
Place the cut potatoes in a bowl of cold water and rinse them to remove excess starch. This step is crucial for achieving crispiness. Let the potatoes soak in cold water with a pinch of salt for about 20 minutes. After soaking, drain them and thoroughly pat them dry with paper towels. Any remaining moisture can cause oil splatter, so complete dryness is essential for safety.
Step 3
Add 2 tablespoons of tempura powder to the dried potato sticks. Gently shake or toss them so that the powder lightly coats each fry. Avoid applying a thick layer of batter, as this can make the fries soggy. A thin coating is key for crispiness.
Step 4
Heat a generous amount of cooking oil in a deep pan or pot over medium-high heat. The oil is ready when a wooden skewer inserted into it bubbles actively (around 170°C or 340°F). Carefully add the coated potato fries to the hot oil. Adding the fries will lower the oil temperature, so you might want to start with higher heat and then reduce to medium. For the ultimate crispy fries, double-frying is highly recommended!
Step 5
First fry: Remove the fries from the oil after they are cooked through but still pale, about 2-3 minutes. This initial fry cooks the inside. They should look lightly golden.
Step 6
Second fry: Let the fries cool slightly after the first fry. Then, increase the oil temperature slightly to around 180°C (360°F) and fry them again for about 1-2 minutes, or until they turn a beautiful golden brown and become delightfully crispy. This second fry is what gives them their signature crunch.
Step 7
Once the fries are perfectly golden and crisp, remove them from the oil and drain any excess oil. While they are still warm, sprinkle with salt to taste and gently toss to distribute evenly.

And there you have it! Delicious homemade French fries, just like you’d get at a restaurant. These crispy delights are perfect with a cold beer or as a satisfying snack that everyone will love. They’re irresistibly good!
