Cooking Instructions
Step 1
Wash the green peppers and trim off the stem and bottom ends. Cut them in half lengthwise and carefully remove all the seeds. Removing the seeds will make it easier to stuff the ingredients and more pleasant to eat.
Step 2
For the shrimp, remove the heads. Gently devein them by making a small incision along the back and pulling out the dark vein with a toothpick or skewer. You can remove the tails if you prefer, but leaving them on can add to the presentation.
Step 3
Insert a wooden skewer firmly through the shrimp, starting from the tail end and going through the body. This will help hold the shrimp securely. Push the skewer deep enough so it goes through the entire shrimp.
Step 4
Bring a pot of water to a boil. Add 1 Tbsp of cooking wine or soju to the boiling water, then add the skewered shrimp. Blanch them briefly for about 1 minute. This step helps eliminate any fishy odor from the shrimp and ensures a firm, pleasant texture.
Step 5
Remove the blanched shrimp from the hot water and rinse them under cold water to cool them down. Once cooled, carefully remove the skewers and peel the shrimp. Set the peeled shrimp aside.
Step 6
Carefully stuff the blanched, peeled shrimp into the hollowed-out green peppers. Reinsert the wooden skewer through the pepper and shrimp to secure them in place. The skewer should pass through the pepper to hold the shrimp inside.
Step 7
Lightly coat the stuffed green pepper skewers with tempura flour. This will help the egg batter adhere evenly.
Step 8
In a bowl, crack the 2 eggs and add 1-2 pinches of fine salt. Whisk well until smooth. For an even smoother batter, you can strain the whisked eggs through a fine-mesh sieve.
Step 9
Heat a frying pan over medium-low heat and add a generous amount of cooking oil. Dip each prepared green pepper skewer into the beaten egg, ensuring it’s fully coated. Carefully place the battered skewers into the hot oil. Fry until golden brown and cooked through on both sides. Maintaining medium-low heat is crucial to prevent burning the outside before the inside is cooked.
Step 10
Once cooked, transfer the green pepper and shrimp skewer pancakes to a serving plate. The vibrant colors will make a beautiful presentation.
Step 11
Serve immediately with your favorite dipping sauces like ketchup, honey mustard, or the prepared soy sauce-based dipping sauce. Each bite will be a delightful combination of crisp pepper, succulent shrimp, and savory batter!
