Main Ingredients- 150g thinly sliced pork belly
- 3 fresh green peppers
- 1/2 king oyster mushroom (or enoki mushroom)
- A small handful of shredded scallion greens
Special Sauce- 1 Tbsp granulated sugar
- 1 Tbsp soy sauce
- 2 Tbsp mirin (rice wine)
- A pinch of freshly ground black pepper

Cooking Instructions
Step 1
First, wash the fresh green peppers and trim off the stems. Cut each pepper in half lengthwise, then cut each half in half again lengthwise. This preparation helps the sauce penetrate better and improves the texture when cooked.
Step 2
Prepare the king oyster mushroom by trimming the base and separating it into smaller strands. Have the shredded scallion greens ready. Lay out a slice of thinly sliced pork belly, then place a piece of green pepper, some king oyster mushroom strands, and a bit of scallion greens onto the pork belly. Carefully roll it up tightly so the filling doesn’t spill out. Be gentle as the pork belly is thin and can tear.
Step 3
In a small bowl, combine 1 tablespoon of sugar, 1 tablespoon of soy sauce, and 2 tablespoons of mirin. Add a pinch of freshly ground black pepper to your liking and whisk everything together to create a delicious, balanced sauce. This sweet and savory blend will enhance the overall flavor of the dish.
