Cooking Instructions
Step 1
Prepare the dried shredded squid. First, cut the dried shredded squid into bite-sized pieces, about 2-3 segments long. Cutting them too short might cause them to unravel during frying, so aim for a moderate length.
Step 2
We’re going to rehydrate the squid slightly. Place the cut squid in a bowl and add just a little water. This step helps to soften the squid, making it more pliable.
Step 3
Drain the squid. Gently toss the squid in the water to soften it, then immediately transfer it to a colander to drain off excess moisture. (Tip: If your dried squid is already soft, you can skip this step. If you’re not soaking it in water, you can mix 1 Tbsp of water with the dry coating powder and toss the squid in that to help the powder adhere better.)
Step 4
Now, let’s apply the dry coating. Sprinkle 1 Tbsp of frying powder evenly over the drained shredded squid. This initial dry coating helps the main batter adhere better and contributes to a crispier finish.
Step 5
Add the curry powder for extra flavor. Sprinkle 1 Tbsp of curry powder over the frying powder. Gently shake the bowl or toss the squid with your hands to ensure the powders are evenly distributed without breaking the squid.
Step 6
Time to make the crispy batter! In a separate bowl, combine 50g frying powder, 60ml water, and 2 Tbsp curry powder. Mix gently with chopsticks until just combined. The batter should be slightly thick; if it’s too runny, the coating might fall off during frying. A slightly thicker batter ensures a good, secure coating.
Step 7
Coat the squid with batter. Add the coated shredded squid to the prepared batter. Gently toss to ensure each piece is evenly coated with the batter. Avoid overly thick coatings, as a lighter layer will result in a crispier fritter.
Step 8
Fry until golden and delicious! Pour a generous amount of vegetable oil into a pot and heat over medium heat until it reaches about 170°C (340°F). You can test the oil temperature by dropping a piece of coated squid in; it should sizzle and float to the surface. Reduce the heat to medium-low to maintain the temperature. Carefully add the battered squid to the hot oil, making sure to separate the pieces so they don’t stick together. Fry for about 2-3 minutes, or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels. Your delicious dried shredded squid fritters are ready to enjoy!
