Main Ingredients- 500g boneless chicken thigh, cut into bite-sized pieces
- 1/2 cup glutinous rice flour
- 1/2 cup roasted soybean powder (kinako)
- 1 cup Injeolmi rice cakes, cut into bite-sized pieces
- Honey, for drizzling
Chicken Marinade Ingredients- 1 Tbsp cooking wine (mirin)
- 2.5 Tbsp soy sauce
- 2/3 Tbsp sugar
- Pinch of salt

Cooking Instructions
Step 1
First, cut the boneless chicken thighs into bite-sized pieces, about 3-4 cm. In a bowl, combine the chicken pieces with 1 Tbsp of cooking wine, 2.5 Tbsp of soy sauce, 2/3 Tbsp of sugar, and a pinch of salt. Mix well and let it marinate for 10 to 20 minutes. Allowing it to marinate ensures the flavors penetrate nicely.
Step 2
Add 1/2 cup of glutinous rice flour to the marinated chicken. Coat the pieces evenly, then gently shake off any excess flour. This step is crucial for achieving a wonderfully crispy texture after cooking.

Arrange the flour-coated chicken pieces in the air fryer basket, ensuring they are in a single layer without overlapping. Air fry at 180°C (350°F) for 15 minutes.
