- 50g toasted almonds
- 10g toasted pine nuts
- 6-7 Tbsp unsweetened soy milk
- 3 Tbsp grapeseed oil (or canola oil)
- 1 Tbsp honey (or agave nectar)
- Pinch of fine salt

Cooking Instructions
Step 1
To enhance the nutty flavor of the dip, begin by toasting the almonds and pine nuts. Place them in a dry pan over medium-low heat and lightly toast until fragrant. This brings out their natural aroma and taste. Be careful not to burn them. Once lightly toasted, remove from the pan and let them cool slightly.
Step 2
Now, prepare the star ingredient for the dip: the fresh ginseng. Wash the ginseng root thoroughly, peel it, and then chop it into small pieces so it can be easily blended. Place the chopped ginseng, the toasted almonds and pine nuts, unsweetened soy milk, grapeseed oil, honey, and salt into a blender or food processor.

Blend all the ingredients until smooth. Start with about 6 tablespoons of soy milk and add more gradually if needed to achieve your desired consistency. The exact amount may vary depending on your blender and the moisture content of the ingredients. Continue blending until you have a smooth, creamy dip. To create a crispy coating, mix the tempura flour and starch in a 1:1 ratio. Add cold water and a tiny pinch of salt, then stir gently with chopsticks until just combined to form a batter. Avoid overmixing, as this can make the fried items less crispy. Dip the flour-coated ginseng slices into the batter, ensuring they are well-coated. Carefully place them into oil preheated to 170-180°C (340-350°F) and fry until golden brown and crispy. Flip them occasionally to ensure even cooking.
