Garlic Chip Anchovy Stir-fry with Whole Garlic Slices
Instead of minced garlic, I’ve made an anchovy stir-fry with whole garlic slices fried until crispy. These add a delightful texture and pungent aroma. (Did you know eating more than 5 cloves of garlic a day is good for you? Enjoy this delicious way to get your daily dose!)
Main Ingredients- 100g small dried anchovies
- 10 cloves whole garlic
Seasoning Ingredients- 5 Tbsp olive oil
- 1 Tbsp soy sauce
- 2 Tbsp corn syrup
- 1 Tbsp sugar
- 1 Tbsp toasted sesame seeds
- A little chopped green onion

Cooking Instructions
Step 1
First, prepare 100g of small dried anchovies. If your anchovies have been stored in the freezer, place them in a dry pan and stir-fry them over medium-low heat until any moisture has evaporated. This helps reduce any bitterness and enhances their crispiness.
Step 2
Transfer the stir-fried anchovies to a sieve and gently shake to remove any powder. Set the prepared anchovies aside for now.
Step 3
Now, let’s make the star of this recipe: the garlic chips! Thinly slice 10 cloves of whole garlic. Heat about 5 tablespoons of olive oil generously in a frying pan over low heat. Add the sliced garlic and fry them gently until golden brown and fragrant. Be careful not to burn the garlic.
Step 4
Once the garlic slices are a beautiful golden color and smell delicious, carefully remove them from the pan and place them on a plate lined with paper towels to drain off excess oil. (A little charring might occur, but it can add a nice toasted flavor!)
Step 5
The olive oil remaining in the pan will be infused with the aromatic essence of the garlic. We’ll use this flavorful oil to stir-fry the anchovies. Turn the heat to medium-low and stir-fry the anchovies, being careful they don’t burn.
Step 6
Once the anchovies are coated with the garlic-infused oil and have been stir-fried for a minute, add all the prepared seasoning ingredients (1 Tbsp soy sauce, 2 Tbsp corn syrup, 1 Tbsp sugar). Stir well to coat the anchovies evenly. As the anchovies become crisp, turn off the heat. Finally, add the crispy garlic chips, 1 tablespoon of toasted sesame seeds, and a little chopped green onion. Mix everything together gently until well combined. Your delicious anchovy stir-fry is ready!
