Crispy Fried Shrimp Dumplings

Dumpling Wrappers & Frying Ingredients- 10 dumpling wrappers
- 10 peeled shrimp (medium-large size)
- 1 egg (beaten)
- Plenty of cooking oil (for frying)
Shrimp Filling Ingredients- 100g shrimp (cocktail shrimp or small shrimp), finely minced
- 1/3 tsp salt
- Pinch of black pepper
- 2 Tbsp potato starch
- 1 Tbsp cooking oil
- 1 Tbsp egg white
- 2 stalks green onion, finely chopped

Cooking Instructions
Step 1
Finely mince the 100g of shrimp that will be used for the filling. While a food processor can be used, mincing with a knife helps retain a better texture.
Step 2
In a large bowl, combine the minced shrimp, 1/3 tsp salt, a pinch of black pepper, 2 Tbsp potato starch, 1 Tbsp cooking oil, 1 Tbsp egg white, and the 2 chopped green onions. Mix and knead until a cohesive paste forms. Using chopsticks or a spatula can make this easier.
Step 3
Make 2-3 shallow cuts along the belly side of the 10 peeled whole shrimp. This will help them lay flat when cooked and prevent them from curling. Also, remove the ‘water vein’ or sharp tip near the head to prevent oil splatter during frying.
Step 4
Brush the flattened, prepared shrimp evenly with the beaten egg. This egg wash will act as a binder for the filling and the shrimp.
Step 5
Place a portion of the shrimp filling onto a dumpling wrapper. Lay one of the prepared whole shrimp on top of the filling. Then, roll up the dumpling wrapper tightly, like making a sushi roll, and seal the edges securely. Lightly wetting the edges with water or egg wash will help them stick.
Step 6
Heat a generous amount of cooking oil in a deep pan or pot to 175°C (350°F). Carefully place the prepared dumplings into the hot oil and fry until golden brown and crispy. Avoid overcrowding the pan, as this can lower the oil temperature. Fry in batches if necessary. Once cooked, remove the dumplings and place them on paper towels to drain excess oil.
