I saw a video demonstrating how incredibly easy it is to make fried saury patties using canned saury, so I decided to try it myself! It’s truly a delightful and unique dish. The outside is wonderfully crispy, and the inside remains moist and flavorful. These fried saury patties are a real treat! Main Ingredients- 1 can (400g) Canned Saury
- 20 Shiso Leaves (Perilla Leaves)
- Vegetable Oil (for frying, enough to generously coat the bottom)
- Red Pepper Flakes (for garnish, a pinch)
Frying Batter Ingredients- 2 Tbsp All-purpose Flour
- 2 Tbsp Cornstarch
- 1 Tbsp Curry Powder
- 2 Tbsp All-purpose Flour

Cooking Instructions
Step 1
First, prepare one can (400g) of canned saury. Drain all the liquid from the can thoroughly. You can gently flake the saury meat with a fork or leave it in larger pieces, being careful not to mash it too finely.
Step 2
In a bowl, combine the batter ingredients: 2 Tbsp all-purpose flour, 2 Tbsp cornstarch, and 1 Tbsp curry powder. Mix them well until there are no lumps. The curry powder helps to eliminate any potential fishy odor from the saury and adds a lovely aroma.
Step 3
Coat the prepared saury pieces evenly with the flour mixture. Gently toss the saury to ensure each piece is well-covered with the batter. Now, pour enough vegetable oil into a pan to generously coat the bottom and heat it over medium heat.
Step 4
Carefully place the coated saury pieces into the heated oil and fry over medium heat until golden brown. Be cautious not to fry at too high a heat, as the outside might burn before the inside is cooked. Once the saury turns a nice golden color, remove it from the oil immediately. If you prefer an extra crispy texture, let the fried saury cool for a moment, then briefly fry it again.
Step 5
Wash the 20 shiso leaves thoroughly under running water and pat them completely dry. Fold each leaf in half, then thinly slice them into shreds. The refreshing aroma of the shiso leaves will cut through the richness of the fried saury.
Step 6
Let’s make the special sauce. In a small bowl, combine 3 Tbsp mayonnaise, 1/2 Tbsp sugar, and 1 Tbsp soy sauce. Finely mince the 2 Korean green chilies and add them to the sauce. Mix everything together well. Feel free to adjust the amount of chili peppers if you prefer it spicier.
Step 7
On a serving plate, arrange the shredded shiso leaves attractively as a bed. Place the golden-brown fried saury patties neatly on top of the leaves. Finally, sprinkle a pinch of red pepper flakes over the saury for a pop of color, making the dish look even more appealing.
