Easy Fried Saury Recipe Using Canned Saury

Following up on Baek Jong-won’s braised saury, I decided to try making fried saury using canned saury this time. There’s no need for extensive preparation; just coat it in tempura powder and fry it – so convenient! I topped mine with thinly sliced chilies and a drizzle of ponzu sauce, which provided a clean, refreshing counterpoint to the fried saury’s rich flavor. It’s a simple yet delicious dish perfect as a snack with beer or a unique side dish.
Main Ingredients- 1 can Canned Saury
- 5 Tbsp Tempura Flour
- 1 Chili Pepper (e.g., Serrano or Red Chili)
Ponzu Sauce- 1 Tbsp Ponzu Soy Sauce (Tsuyu)
- 0.5 Tbsp Lemon Juice
- 1 Tbsp Mirin (or Cooking Sake)

Cooking Instructions
Step 1
First, open the can of saury. Drain the liquid from the can and carefully remove the saury pieces. Gently pat them dry with a paper towel; this helps reduce oil splatter during frying.

Step 2
Evenly coat the drained saury pieces with tempura flour. This coating will help absorb any fishy odors and create a wonderfully crispy texture. Make sure to shake off any excess flour to avoid clumping.

Step 3
Pour a generous amount of cooking oil into a frying pan and heat it over medium heat. Once the oil is moderately hot, carefully add the flour-coated saury pieces. Fry them until golden brown and crispy on both sides, which should take about 3-4 minutes.

Step 4
Transfer the fried saury to a serving plate. Wash the chili pepper, remove the stem, and slice it very thinly. Arrange the sliced chili attractively over the fried saury. The mild heat from the chili will cut through the richness.

Step 5
In a small bowl, combine all the ponzu sauce ingredients: ponzu soy sauce, lemon juice, and mirin. Whisk them together until well combined. The zesty lemon juice adds a refreshing kick that perfectly complements the fried saury.

Step 6
Finally, drizzle the prepared ponzu sauce over the fried saury and chili. Your delicious fried saury from a can is now ready to be enjoyed! Serve immediately for the best crispy texture.
