I tried this recipe from ‘Baek Jong-won’s Home Cooking’. It’s a sophisticated one-bowl meal you can make even when you don’t have many ingredients at home. Experience the unique charm of fried eggs – crispy on the outside and tender on the inside!
Main Ingredients- 1.5 medium onions, thinly sliced
- 6 hard-boiled eggs, peeled
- 5 Tbsp cooking oil
- 1 packet commercial curry powder
- 3 cups water (approx. 600ml)
- Pinch of black pepper (optional)
Cooking Instructions
Step 1
First, prepare all the ingredients for the dish. Peel the hard-boiled eggs and set aside. Thinly slice the onions. Measure out the curry powder and water.
Step 2
In a frying pan, heat 5 tablespoons of cooking oil generously over medium heat. Add the peeled hard-boiled eggs and fry them until they turn a nice golden brown. Be careful as the oil might splatter; consider covering the pan or using caution. Rotate the eggs to ensure even browning.
Step 3
Once the eggs start to develop a tempting brown color, add the thinly sliced onions to the pan.
Step 4
Now, reduce the heat to medium-low. The key to a delicious curry is to sauté the onions until they become translucent and then gradually turn a rich brown color. This process brings out the natural sweetness of the onions, significantly deepening the curry’s flavor. Stir occasionally to prevent burning.
Step 5
After the onions are well sautéed, pour in 1 packet of curry powder and 3 cups of water, mixing well. Bring to a boil over high heat, then reduce to medium-low, stirring constantly to prevent sticking. Cook until the curry reaches your desired thickness. Once done, turn off the heat. Optionally, sprinkle with a pinch of black pepper. Serve hot over steamed rice and enjoy!
