Main Ingredients- 6 Fried dumplings
- 1 serving Udon noodles
- 2 packets Bibimjang (Spicy sauce, approx. 4 Tbsp)
- 1/3 Cucumber
- 1/6 Carrot
- 1 Cabbage leaf
- 5 Perilla leaves
- 1 Cheongyang pepper (Korean chili pepper)
- 2 Tbsp Sesame oil
- 1 Tbsp Toasted sesame seeds
- 5 Tbsp Cooking oil
Cooking Instructions
Step 1
Prepare all your ingredients thoroughly before you begin. Thinly julienne the cucumber, carrot, and cabbage. Finely chop the perilla leaves and Cheongyang pepper. Note that two packets of bibimjang typically amount to about 4 tablespoons. (Tip: Julienne all vegetables to a similar thickness for even seasoning and a better taste.)

Step 3
Heat 5 tablespoons of cooking oil in a frying pan over medium heat. Place the fried dumplings in the pan and cook until they are golden brown and crispy on both sides, flipping them occasionally. Ensuring the dumpling wrappers are a rich golden brown is key to a delicious result.
Step 4
Bring a generous amount of water to a rolling boil in a pot. Once boiling, add the udon noodles and cook over high heat for about 2 to 2.5 minutes. It’s important not to overcook them to prevent mushiness. Immediately drain the cooked udon noodles and rinse them under cold running water to remove excess starch, then drain them thoroughly. (Tip: You can significantly reduce cooking time by doing this step simultaneously while the dumplings are frying.)
Step 5
In a large bowl, combine the julienned cucumber, carrot, cabbage, chopped perilla leaves, and minced Cheongyang pepper. Add the bibimjang, 2 tablespoons of sesame oil, and 1 tablespoon of toasted sesame seeds. Gently mix everything together with your hands, ensuring the seasoning coats all the vegetables evenly. The goal is to maintain the fresh crunchiness of the vegetables.
Step 6
In a separate bowl, place the drained udon noodles. Add a little more bibimjang (adjust to your taste), 1 tablespoon of sesame oil, and a pinch of toasted sesame seeds. Gently toss the noodles to ensure they are well-coated with the sauce and seasoning. Mixing thoroughly will help the noodles become flavorful and delightfully chewy.
Step 7
Arrange the seasoned udon noodles attractively in a serving bowl. Top with three of the golden-brown fried dumplings for a visually appealing presentation. This combination highlights the interplay between the crisp dumplings, chewy noodles, and vibrant vegetables.
Step 8
Prepare a wide serving dish. Arrange three crispy fried dumplings, the freshly seasoned mixed vegetables, and about one-third of the seasoned udon noodles artfully on the dish. This generous plating showcases the colorful ingredients and makes for an inviting meal.
Step 9
You can present your Crispy Fried Dumpling Bibim Udon in various ways to suit your preference. You can serve the fried dumplings, mixed vegetables, and udon noodles separately in a large bowl for each person to mix their own, or you can first mix the vegetables and udon noodles with the bibimjang, and then generously top it all with the crispy fried dumplings for an even more abundant and satisfying meal.
Step 10
This Crispy Fried Dumpling Bibim Udon is a delightful culinary experience, offering a perfect harmony of textures: the satisfying crunch of the fried dumplings, the refreshing crispness of the mixed vegetables, and the wonderfully chewy, springy texture of the udon noodles. It’s a simple yet incredibly hearty and delicious meal that’s perfect for any occasion.
