This recipe by Ryu Soo Young features dumplings that are fried to a perfect crisp and then tossed in a flavorful savory sauce, creating a delightful Korean dish called ‘Muchim Mandu’.
Ingredients for Dumplings & Sauce- 10 dumplings (frozen or fresh)
- 4 Tbsp granulated sugar
- 4 Tbsp fine gochugaru (Korean chili powder)
- 4 Tbsp water
- 1 Tbsp toasted sesame seeds
- 1 Tbsp gochujang (Korean chili paste), generously packed
- 1 Tbsp oyster sauce
- 2 Tbsp ketchup
Cooking Instructions
Step 1
First, let’s prepare the special sauce for our ‘Muchim Mandu’. In a bowl, combine 4 tablespoons of granulated sugar, 4 tablespoons of fine gochugaru, and 4 tablespoons of water. Mix them well. Allowing the gochugaru to soak in the liquid will help it soften and blend smoothly into a delicious sauce.
Step 2
While the gochugaru is hydrating, add the remaining sauce ingredients. Add 1 tablespoon of gochujang (packed generously), 1 tablespoon of oyster sauce, 2 tablespoons of ketchup, and finally, 1 tablespoon of toasted sesame seeds. Stir everything together until well combined. Your flavorful sauce is now ready!
Step 3
Now, it’s time to fry the dumplings. Preheat your pan over high heat, then reduce the heat to medium before placing the dumplings in the pan. To prevent oil splatter and achieve extra crispiness, add a splash of water to the pan before the dumplings. Once the water has evaporated, pour in a generous amount of cooking oil. We recommend using enough oil so that the edges of the dumplings are partially submerged.
Step 4
Fry the dumplings, turning them occasionally, until they are golden brown and crispy on both sides. Once perfectly fried, remove the dumplings from the pan and place them on a paper towel-lined plate to drain any excess oil. Let them cool slightly before tossing them in the sauce; this helps maintain their crispiness.
Step 5
Once the fried dumplings have cooled a bit, add them to the prepared sauce. Gently toss to coat each dumpling evenly with the sauce. Feel free to adjust the seasoning to your preference by adding more sugar, gochugaru, or oyster sauce if needed, for a taste that perfectly suits you.
