Odor Removal & Parboiling- 500g frozen boneless chicken feet
- 1 Tbsp ginger powder
- 5-7 dried Vietnamese chili peppers
- 4-6 bay leaves
- 1 shot soju (approx. 100ml)
- Water as needed
Crispy Batter- 1 cup chicken fry mix (approx. 100g)
- 1.5 cups cold water (approx. 150ml)
- 1 Tbsp curry powder
- 0.5 Tbsp black pepper
- 1 pinch salt
Store-bought Sauces (to taste)- 3 Tbsp Honey Garlic Chicken Sauce
- 3 Tbsp Spicy Yangnyeom Chicken Sauce
- 1 cup chicken fry mix (approx. 100g)
- 1.5 cups cold water (approx. 150ml)
- 1 Tbsp curry powder
- 0.5 Tbsp black pepper
- 1 pinch salt
Store-bought Sauces (to taste)- 3 Tbsp Honey Garlic Chicken Sauce
- 3 Tbsp Spicy Yangnyeom Chicken Sauce
Cooking Instructions
Step 1
First, rinse the frozen boneless chicken feet under running water to thaw them. In a pot, combine the chicken feet, 1 Tbsp ginger powder, 5-7 dried Vietnamese chili peppers, 4-6 bay leaves, and 1 shot of soju. Add enough water to cover the chicken feet. Bring to a boil over high heat, then reduce to medium-low and simmer for 10-15 minutes to remove any gamey odors and tenderize them.
Step 2
While the chicken feet are boiling, prepare the crispy batter. In a bowl, combine 1 cup (approx. 100g) of chicken fry mix, 1.5 cups (approx. 150ml) of cold water, 1 Tbsp curry powder, 0.5 Tbsp black pepper, and a pinch of salt. Mix well, but don’t overmix; a few lumps are fine. This will help create a crispier coating.
Step 3
Drain the chicken feet that were parboiled for odor removal and let them cool slightly. Frying them while still hot can cause the batter to peel off or become soggy, so letting them cool is important.
Step 4
Once the chicken feet have cooled sufficiently, coat them evenly with the prepared batter. Gently toss them to ensure each piece is well-covered.
Step 5
Heat about 2-3 inches of cooking oil in a frying pan or pot to 170-180°C (340-350°F). To test the temperature, drop a little batter into the oil; it should sizzle and float to the surface immediately. Carefully add the battered chicken feet in batches (don’t overcrowd the pan) and fry for about 4 minutes until golden brown and crispy.
Step 6
Transfer the fried chicken feet to a wire rack or paper towel-lined plate to drain excess oil. This step helps maintain the crispiness of the fried coating. The coating will become even crispier as it cools down.
Step 7
Using store-bought sauces makes this dish even more convenient and delicious. Mix the Honey Garlic Chicken Sauce and Spicy Yangnyeom Chicken Sauce to your preference.
