Whip up a delightful mashed potato snack using Jeju red potatoes! This recipe creates a wonderfully tasty treat that’s perfect for any time of day. Enjoy a satisfying crunch with a fluffy interior.
Main Ingredients- 13 small potatoes (Jeju red potatoes recommended)

Cooking Instructions
Step 1
For this recipe, we’ll be using Jeju red potatoes. Since we’re cooking them with the skin on, it’s crucial to wash them thoroughly under running water. Make sure to scrub away any dirt or debris.
Step 2
Place the washed potatoes in a pot and cover them with enough water to submerge. Add 1 teaspoon of salt to the water and bring it to a boil over high heat. Once boiling, reduce the heat to medium-low and let the potatoes cook until they are tender enough to be easily mashed with a fork (this usually takes about 20-30 minutes).

We’ll be baking these in an oven or air fryer. Line your baking tray or air fryer basket with parchment paper and lightly drizzle with olive oil. If you’d like to add an extra layer of flavor, you can also place small pats of butter on the tray. Butter will contribute to a richer, more savory mashed potato bake.
Step 4
Drain the boiled potatoes well and arrange them on the prepared tray. Now, it’s time to flatten them. Use the bottom of a flat-bottomed glass or a small bowl to press down firmly on each potato, flattening them into discs. Avoid pressing too thin; aim for a good thickness that will crisp up nicely.

Freshly grind black pepper over the flattened potatoes. Sprinkle with herb salt to taste for seasoning. Finally, use an oil spray to lightly mist the potatoes with olive oil. This will help them achieve a lovely crisp exterior.
Step 6
Preheat your air fryer to 180°C (350°F). Place the prepared potatoes in the air fryer and bake for about 20 minutes. It’s a good idea to check on them around the 15-minute mark. If they need more time to crisp up, continue baking. I used two trays, so I baked them for 15 minutes, then swapped their positions and baked for an additional 10 minutes. This method ensures even crispiness.
