Main Ingredients- 5-6 medium potatoes

Cooking Instructions
Step 1
Choose fresh potatoes. Even recently purchased potatoes might show slight sprouts. Trim off any sprouted parts and thoroughly scrub the potatoes with a soft scrub brush to remove all dirt. Since we’ll be baking them with the skin on, a thorough cleaning is essential.
Step 2
We will steam the potatoes. Add an appropriate amount of water to a pot, place a steamer basket inside, and add the potatoes. Cover with a lid, bring to a boil over high heat, then reduce to medium-low heat and steam for 20 minutes.
Step 3
Check if the potatoes are cooked through by inserting a fork. They should be tender. About 20 minutes of steaming usually does the trick.

Prepare your butter and olive oil. You can use just olive oil or just butter, but using both adds a wonderful depth of flavor. Cut the butter into appropriate sizes (about 10g each) according to the number of potatoes.

Place a steamed potato onto a flat-bottomed dish and press down firmly to mash it. Mashing them to an even thickness will help them crisp up nicely in the air fryer.

Drizzle a little olive oil over the mashed potato. This prevents burning and adds a savory flavor.

Add a piece of prepared butter on top of the mashed potato. Since mashed potatoes can break apart easily when transferred to the air fryer basket, it’s best to add the butter to the potato while it’s still in the dish. Mash any remaining potatoes directly on the air fryer rack and then add butter.

Now, preheat your air fryer to 200℃ (400°F) and bake for 15 minutes. Flipping halfway through can ensure even cooking, but the mashed potatoes are fragile, so baking without flipping is fine; the bottom will still become wonderfully crisp. While using parchment paper in the air fryer makes for easy cleanup, baking directly on the rack yields a crispier result.
