I absolutely adore dumplings! My love for them started in childhood and continues to this day. Everyone in my family loves dumplings, and while the usual ways to enjoy them are frying, boiling, or steaming, I wanted something different today. I was craving fried dumplings but also wanted a fresh, zesty side dish, so I created these Crispy Flattened Dumplings with Refreshing Scallion Salad! The combination of perfectly crisp dumplings and a vibrant, tangy scallion salad is simply delightful.
Main Ingredients- 4 Flattened dumplings
- 1/3 stalk Scallions (approx. 50g)
- 1 bowl Water (for steaming)
Tangy & Sweet Dressing- 1 Green chili pepper (finely minced)
- 1.5 Tbsp Soy sauce
- 3-4 Tbsp Vinegar (adjust to taste)
- 2 Tbsp Gochugaru (Korean chili flakes)
- 1 swirl Sesame oil (to taste)

Cooking Instructions
Step 1
Let’s start by preparing the scallions. Wash the scallions thoroughly and separate the white and green parts. Make about 2-3 shallow lengthwise cuts into the white part of the scallions, stopping before you reach the very end. This prevents the scallions from falling apart when julienned.

Julienne the scored white parts of the scallions very thinly. The thinner they are, the better they will absorb the dressing and the more pleasant the texture will be. You can also julienne the green parts and mix them in for a prettier color.

To remove the pungent and slightly bitter taste of the scallions, soak the julienned scallions in cold water for about 5 minutes. This soaking process helps retain their crispness while mellowing out any harsh flavors, making them more enjoyable.
