Main Ingredients- 1 packet Enoki mushrooms (trim the base and rinse thoroughly under running water)
- 150g can Tuna (drained or use as is)
- 1 stalk Green onion (finely chopped, white parts preferred)
- A small amount of Carrot (finely minced)
- A small amount of Sweet corn kernels (canned, drained)
Batter & Seasoning- 2 Eggs
- 1 Tbsp Flour (or pancake mix/tempura flour)
- 1 pinch Salt
- 2 Tbsp Cooking oil (for frying)

Cooking Instructions
Step 1
First, thoroughly rinse the enoki mushrooms under running water, making sure to clean the base where dirt might accumulate.
Step 2
Trim the rinsed enoki mushrooms to about 0.5 to 0.7 cm in length for easy eating. Finely chop the green onion and carrot.
Step 3
In a bowl, combine the chopped enoki mushrooms, minced green onion, minced carrot, and sweet corn kernels. Mix them gently. Add the 2 eggs, 1 Tbsp of flour, and a pinch of salt. Stir everything together until a cohesive batter forms. (Note: Using pancake mix or tempura flour instead of all-purpose flour will result in a crispier pancake. You can also use the oil from the tuna can, but draining it first will give a cleaner taste.)
Step 4
Heat about 2 Tbsp of cooking oil in a non-stick pan over medium-low heat. Scoop portions of the batter with a spoon and carefully place them onto the hot pan, forming small, round pancakes.
Step 5
Cook the pancakes for a few minutes on each side until they are golden brown and crispy. It’s important to cook them over medium-low heat to ensure they cook through completely.
