  • 1 Tbsp tempura powder (approx. 15g)
  • 1 egg
  • Cooking oil, for frying

First, prepare the enoki mushrooms. Trim off the hard base with a knife. Cut the mushrooms into 2-3 cm segments, about three pieces per mushroom, and gently separate the strands. This makes them easier to mix with the batter and improves their texture when cooked.

Add the tempura powder to the prepared enoki mushrooms and toss gently to coat. Coating the mushrooms evenly with tempura powder will ensure the pancakes become extra crispy when fried. Break apart any clumps.

Now, crack in 1 egg and add the 1/2 Tbsp of tuna extract. If you don’t have tuna extract, a little soy sauce can be used as a substitute.
