Today, we’re adding small dried shrimp to the mix for an extra nutty flavor and umami boost! This is a super simple recipe that requires only soy sauce and corn syrup.   • Sugar, 1 Tbsp (approx. 15ml)
  • Water, 50ml (equivalent to 1 small soju glass)
  • Toasted sesame seeds or ground sesame seeds, a pinch

Cooking Instructions

Step 1

First, place the 2 handfuls of small dried anchovies into a dry pan. Stir-fry them over low heat for 2-3 minutes. This process removes any fishy odor and makes the anchovies crispier.

Next, add the 1 handful of small dried shrimp and stir-fry them over low heat for 1-2 minutes, similar to the anchovies. While you can cook them together, stir-frying them separately helps enhance each ingredient’s unique flavor.

Now, pour 50ml of water (about 1 soju glass full) into the pan and add 2 Tbsp of corn syrup or rice syrup. Using rice syrup can give your stir-fry a shinier finish.

Add 1.5 Tbsp of soy sauce and bring the mixture to a boil over medium-high heat. As soon as you see it bubbling vigorously, proceed to the next step.

Add the pre-stir-fried small dried anchovies into the pan with the bubbling sauce.

Then, add all of the stir-fried small dried shrimp.

Reduce the heat to medium-low. Gently toss and stir the ingredients for 1-2 minutes until the sauce evenly coats everything. Be careful not to overcook, as the anchovies can become too hard.
