Main Ingredients- 80g dried pollack (thick cut)
- 2 Tbsp whole almonds
- 1 Tbsp pumpkin seeds
- 1 Tbsp sunflower seeds
- 3 Tbsp cooking oil
Seasoning- 1 Tbsp minced garlic
- 1/2 Tbsp sugar
- 2 Tbsp soy sauce
- 3 Tbsp corn syrup (or oligosaccharide)
- 2 Tbsp gochugaru (Korean chili flakes)
- 1 Tbsp sesame oil
- 1 Tbsp toasted sesame seeds
- 1 Tbsp minced garlic
- 1/2 Tbsp sugar
- 2 Tbsp soy sauce
- 3 Tbsp corn syrup (or oligosaccharide)
- 2 Tbsp gochugaru (Korean chili flakes)
- 1 Tbsp sesame oil
- 1 Tbsp toasted sesame seeds
Cooking Instructions
Step 1
First, cut the dried pollack into bite-sized pieces, about 2cm in length. Since we’ll be air frying it for crispiness, using thicker cuts of dried pollack will yield better results.

Pour 3 tablespoons of cooking oil over the prepared dried pollack.
Step 3
Gently mix with your hands, ensuring the oil is evenly distributed. Let it sit for about 5 minutes to allow the oil to penetrate. This step helps keep the dried pollack moist and tender during cooking.
Step 4
Line the air fryer basket with parchment paper and arrange the oil-coated dried pollack in a single layer, avoiding overlap. Even distribution is key for consistent cooking.

Place the dried pollack in a preheated air fryer at 180°C (350°F) and cook for 5 minutes initially.

After 5 minutes, the dried pollack should be golden brown and starting to crisp up. Cooking times may vary depending on your air fryer model. Even at the same temperature and time, check occasionally and adjust as needed. If you prefer it extra crispy, you can extend the cooking time slightly.

Prepare the other ingredients. Lightly rinse 2 tablespoons of whole almonds, 1 tablespoon of pumpkin seeds, and 1 tablespoon of sunflower seeds under running water, then drain well. Toast them in a dry pan over low heat until fragrant. Rinsing the nuts will remove any impurities, resulting in a cleaner, nuttier flavor.

In a pan, combine the seasoning ingredients: 1 tablespoon minced garlic, 1/2 tablespoon sugar, 2 tablespoons soy sauce, 3 tablespoons corn syrup (or oligosaccharide), and 2 tablespoons gochugaru. Bring the mixture to a simmer over medium-low heat. Once it starts to bubble, reduce the heat slightly.
Step 9
Once the sauce is simmering, reduce the heat to low. Add the air-fried dried pollack and the toasted nuts to the pan.
Step 10
Over low heat, gently stir and toss the dried pollack and nuts with the sauce until evenly coated. Using two spatulas can help mix everything thoroughly without breaking the pollack. Be careful not to cook over high heat, as this can burn the sauce or make the pollack too hard.

When the dried pollack and nuts are well-coated with the sauce, stir in 1 tablespoon of toasted sesame seeds and 1 tablespoon of sesame oil to finish. This adds a glossy sheen and fragrant aroma.
