- 1 tsp sugar (approx. 5g, to balance the sourness)
- 1/2 onion (approx. 50g, optional)

Hello everyone! Today, we’re going to make a wonderfully delicious kimchi pancake that’s crispy on the outside and tender on the inside. Try making this simple yet impressive dish using aged kimchi you have at home.

First, thoroughly squeeze out the excess water from the kimchi. Then, thinly slice it into strips about 0.5cm thick to maintain a pleasant crunch. If you cut it too finely, the texture might be less pronounced, so aim for moderate thickness.

Now, let’s make the batter. In a large bowl, combine 1 cup of pancake mix and 1 cup of all-purpose flour. Add 1 cup of cold water. For seasoning, add a pinch of salt, and for balancing the sourness of the kimchi and enhancing its umami, add 1 teaspoon of sugar.

To add more flavor to your kimchi pancake, prepare half an onion. Peel and thinly slice the onion and add it to the batter. Adding onion contributes sweetness and a richer flavor, making the pancake even more delicious.
