Introducing an incredibly simple radish salad recipe that takes only 10 minutes to make, preserving the radish’s natural crispiness without the fuss of pre-salting. This is the perfect side dish to make any meal special!
Ingredients- 600g fresh radish
- 2 Tbsp red pepper flakes (gochugaru)
- 1 Tbsp minced garlic
- 1 Tbsp sugar
- 1 Tbsp omija extract (or plum extract) (for sweet and sour flavor)
- 2 Tbsp vinegar (rice vinegar or apple cider vinegar recommended)
- 2 Tbsp fish sauce (anchovy or sand lance)
- Salt to taste
- Sesame seeds (for nutty flavor)
- 1 cup chopped green onions (using a paper cup as a measure)
Cooking Instructions
Step 1
First, thoroughly wash the fresh radish under running water. You can peel the radish if you prefer, or simply clean off any dirt if the skin is tender and clean. Now, using a knife or a mandoline slicer, julienne the radish into very thin strips. Slicing the radish thinly is key to allowing the seasoning to penetrate well, resulting in a more flavorful and crisp radish salad. This thin julienning is the secret to this recipe!
Step 2
Add 2 tablespoons of red pepper flakes (gochugaru) to the julienned radish. Gently rub the radish with your hands, tossing it back and forth, to evenly coat it with the red pepper flakes. This will give the radish a beautiful vibrant red color. This process also helps to naturally draw out some moisture from the radish, making it even crisper.
Step 3
Now it’s time to add the seasonings that will enhance the savory flavor and aroma of the radish salad. Add 1 tablespoon of minced garlic and 1 tablespoon of sugar to balance the sweetness. Then, add 1 tablespoon of omija extract (or plum extract) for that delightful sweet and sour taste, along with 2 tablespoons of vinegar. If you don’t have omija or plum extract, you can adjust the ratio of regular sugar and vinegar to achieve a similar flavor profile.

Finally, add 2 tablespoons of fish sauce (anchovy or sand lance) for umami and a pinch of salt to adjust the seasoning. Gently mix everything together with your hands, tossing the radish as if you’re kneading it, to ensure all the seasonings are well combined. Taste the salad and add a little more salt if needed. If you prefer a tangier flavor, feel free to add another 1/2 tablespoon of vinegar. Lastly, sprinkle in some sesame seeds for a nutty aroma and the freshly chopped green onions for a fresh flavor. Give it a final gentle toss – and your delicious radish salad, ready in just 10 minutes without any salting, is complete!
