Rice Ball Ingredients- 1.5 bowls of warm cooked rice
- 1/2 fresh cucumber
- 2/3 can of drained tuna (packed in water or oil)
- 2-3 pieces of fried tofu (inari)
Seasoning and Condiments- 1.5 Tbsp fragrant sesame seeds
- 2/3 Tbsp creamy mayonnaise
- 1 Tbsp tangy vinegar
- 1 tsp savory salt
- 1 Tbsp sweet sugar
- 1.5 Tbsp fragrant sesame seeds
- 2/3 Tbsp creamy mayonnaise
- 1 Tbsp tangy vinegar
- 1 tsp savory salt
- 1 Tbsp sweet sugar
Cooking Instructions
Step 1
First, slice the cucumber as thinly as possible. Thin slices will provide a crispier texture and allow the seasonings to penetrate better.
Step 2
In a bowl, gently toss the sliced cucumber with salt, vinegar, and sugar. Let it sit for about 10 minutes to pickle. This step draws out excess moisture and deepens the flavor.
Step 3
After pickling, thoroughly squeeze out the excess water from the cucumber slices. Removing the water is crucial to prevent the rice balls from becoming soggy.
Step 4
In a larger bowl, combine the well-drained tuna and finely chopped fried tofu.
Step 5
Add the warm cooked rice to the bowl. Sprinkle in the fragrant sesame seeds and creamy mayonnaise. Gently mix everything together, being careful not to mash the rice grains. It’s best to let the rice cool slightly after cooking before mixing with mayonnaise to prevent it from separating.
Step 6
Finally, add the squeezed cucumber to the mixture. Gently fold it in to combine with the other ingredients, ensuring you don’t overmix, which could release a grassy flavor from the cucumber.
Step 7
Take portions of the rice mixture and shape them into bite-sized, round rice balls. Lightly wetting your hands with water or a little sesame oil will prevent the rice from sticking, making it easier to form the balls.
Step 8
Arrange the beautifully shaped rice balls on a plate. For an extra touch of flavor, you can drizzle a little extra mayonnaise or serve with a dab of wasabi according to your preference.
