Main Ingredients

  • 1 cucumber (medium size)
  • 1 Cheongyang pepper (adjust spiciness as desired)

Seasoning Ingredients

  • 1/2 Tbsp Doenjang (fermented soybean paste)
  • 1/2 Tbsp Ssamjang (Korean seasoned soybean paste)
  • 1/2 Tbsp minced garlic
  • 1 Tbsp sesame oil
  • A pinch of sesame seeds (for garnish)

Cooking Instructions

Step 1

First, thoroughly wash the fresh cucumber under running water. If you prefer, you can lightly peel the skin using a peeler, or use it with the skin on. Slice the cucumber into approximately 0.5cm thick pieces, easy to eat, and place them in a large bowl. Finely mince the Cheongyang pepper, removing the seeds, and add it to the bowl with the cucumber.

Now, let’s make the delicious seasoning. Add 1/2 Tbsp of doenjang, 1/2 Tbsp of ssamjang, and 1/2 Tbsp of minced garlic to the prepared cucumber and pepper. Don’t forget to add 1 Tbsp of sesame oil for that savory and nutty flavor.

Once all the prepared seasonings are in the bowl, gently mix everything together with your hands, like you’re ‘jomal-jomal’ (massaging gently). It’s important to mix them softly so the cucumber doesn’t get mushy. Finally, sprinkle some sesame seeds on top for garnish, and your crispy and delicious cucumber salad with doenjang is complete! It’s great to eat right away, or you can chill it in the refrigerator for a while for an even more refreshing taste.
