Main Ingredients- 1.5 cucumbers
- 1/4 onion (optional)
- 1/4 carrot (optional)
Seasoning Ingredients- 3 Tbsp gochugaru (Korean chili flakes)
- 2 Tbsp soy sauce
- 1.5 Tbsp vinegar
- 1 Tbsp sugar
- 1.5 Tbsp minced garlic
- 1 Tbsp sesame oil
- 1 Tbsp sesame seeds

Cooking Instructions
Step 1
First, wash and prepare 1.5 cucumbers. Slice the cucumbers thinly on an angle or into thin rounds. Place the sliced cucumbers in a bowl, add 1 Tbsp of coarse salt, and gently mix. Let them sit for about 10 minutes to salt. This process makes the cucumbers crispier and draws out excess water, enhancing the flavor. Thinly slice the onion and carrot. (Onions and carrots are optional but add color and flavor.)
Step 2
While the cucumbers are salting, mix the seasoning ingredients. In a bowl, combine 3 Tbsp gochugaru, 2 Tbsp soy sauce, 1.5 Tbsp vinegar, 1 Tbsp sugar, 1.5 Tbsp minced garlic, 1 Tbsp sesame oil, and 1 Tbsp sesame seeds. Stir well to create the seasoning sauce. (Measurements are based on a standard Korean rice spoon.)
Step 3
Gently squeeze out the excess water from the salted cucumbers. Add the prepared cucumbers and the sliced onion and carrot to the bowl with the seasoning sauce. Gently mix everything together with your hands. Be careful not to mash the cucumbers. Taste and adjust seasoning if needed, adding more soy sauce for saltiness or sugar for sweetness.
