Crispy Cucumber and Chive Salad
Quick Cucumber and Chive Salad (Baek Jong-won Style Seasoning)
Have cucumbers in your fridge? If you’re in need of a side dish to go with your rice, whip up this quick and delicious seasoned cucumber and chive salad! It’s refreshing, crunchy, and packed with flavor.
Main Ingredients
- 1 cucumber (about 200g)
- 1 bunch chives (about 50g)
- 1/4 onion (about 50g)
- 1 spicy chili pepper (optional, for extra heat)
Baek Jong-won’s Golden Ratio Seasoning
- 1 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp Gochugaru (Korean chili flakes)
- 1 Tbsp Soy Sauce
- 1 Tbsp Vinegar
- 1 Tbsp Sesame Oil
- 1 Tbsp Sugar
- 1 Tbsp Oligodang (corn syrup or similar sweetener)
- 0.5 Tbsp Minced Garlic
- A pinch of Sesame Seeds (for garnish)
- 1 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp Gochugaru (Korean chili flakes)
- 1 Tbsp Soy Sauce
- 1 Tbsp Vinegar
- 1 Tbsp Sesame Oil
- 1 Tbsp Sugar
- 1 Tbsp Oligodang (corn syrup or similar sweetener)
- 0.5 Tbsp Minced Garlic
- A pinch of Sesame Seeds (for garnish)
Cooking Instructions
Step 1
First, prepare the vegetables. Wash the cucumber thoroughly, trim off the ends, and slice it diagonally about 0.5 cm thick. Peel the onion and thinly slice it into strips. Wash the chives, pat them dry, and cut them into approximately 5cm lengths. If using a spicy chili pepper, remove the seeds and finely mince it. (Optional)
Step 2
In a mixing bowl, combine the prepared cucumber, chives, onion, and the optional chili pepper. Now, add all the seasoning ingredients: gochujang, gochugaru, soy sauce, vinegar, sesame oil, sugar, oligodang, and minced garlic. Gently mix everything together with your hands. Be careful not to overmix, as this can make the cucumber mushy. Mix just until everything is well combined.
Step 3
Once the vegetables and seasoning are nicely mixed, sprinkle with sesame seeds for a final touch. Your delicious and crunchy cucumber and chive salad is ready! It’s best enjoyed immediately, but it also tastes great chilled after refrigerating. Enjoy this delightful side dish with your meal!
