A dear friend, the mother of one of my child’s playmates, recently shared a bag full of adorable baby potatoes with me. As soon as I saw these perfectly bite-sized potatoes, I was reminded of the ‘smashed potato bake’ that was all the rage on social media a few years ago, and I decided it was the perfect time to make it again! These smashed potatoes, with their crispy exterior and creamy interior, are a fantastic snack for children and a satisfying meal option. You can create a wonderful dish with just a few simple ingredients, so let’s get cooking!

In a microwave-safe bowl, add about 50ml of water and place the cleaned baby potatoes. Cover the bowl tightly with plastic wrap, then poke a few small holes in the wrap with a fork to allow steam to escape. Microwave for about 5 minutes. To check if they are cooked, insert a fork – it should go in smoothly. (Adjust cooking time based on potato size.)

Once the potatoes are cooked in the microwave, carefully remove them and gently flatten each one into a disc shape. While you can use various tools, a flat plate or the back of a fork works well. Apply gentle pressure to smash them without breaking them apart – this is the key step.
