Ingredients- 1 can (340g) Sweet Corn, drained
- 1/2 Onion, finely minced
- 140g Pizza Cheese (e.g., Mozzarella)
- 2 Tbsp Mayonnaise
- 1/2 Tbsp Sugar
- Pinch of Salt
- Pinch of Black Pepper
- Pinch of Parsley Flakes (optional, for garnish)
- 22 Dumpling Wrappers
Cooking Instructions
Step 1
First, prepare one can of sweet corn. Drain it thoroughly using a sieve to remove all excess liquid. This step is crucial for ensuring the filling isn’t too watery and results in a better texture.
Step 2
Next, finely mince half an onion. The onion will add a lovely sweetness and a slight crunch to the filling, complementing the corn and cheese.
Step 3
In a mixing bowl, combine the drained sweet corn, minced onion, pizza cheese, 2 tablespoons of mayonnaise, and 1/2 tablespoon of sugar. Add a pinch of salt and black pepper to taste. Mix all the ingredients (except the dumpling wrappers) thoroughly with a spatula or spoon until well combined. Ensure the cheese is evenly distributed throughout the filling.
Step 4
Now, it’s time to assemble the dumplings. Place a moderate amount of the corn cheese filling onto each dumpling wrapper. Be careful not to overfill, as this can cause the wrapper to break. Lightly moisten the edges of the dumpling wrapper with water using your fingertip. This will help seal the dumplings securely.
Step 5
Carefully fold the dumpling wrapper in half, enclosing the filling, to create a half-moon shape. Gently press the edges together, making sure the filling stays inside.
Step 6
To further secure the dumplings and give them a neat appearance, press down firmly along the sealed edges with the tines of a fork. This creates a decorative pattern and ensures the filling won’t leak out during cooking.
Step 7
The assembled dumplings can be cooked immediately, or they can be stored in a freezer-safe bag in the freezer for later. If freezing, it’s best to arrange them in a single layer initially to prevent them from sticking together before transferring to a bag.
Step 8
Heat a frying pan over medium heat and add a generous amount of cooking oil. Carefully place the dumplings into the hot pan, ensuring they don’t overcrowd it.
Step 9
Reduce the heat to medium-low and cook the dumplings until the bottoms are golden brown and crispy. Flip the dumplings occasionally to ensure they cook evenly on all sides. Once they are beautifully golden and cooked through, you can garnish them with a sprinkle of parsley flakes and serve immediately. Enjoy your delicious homemade Corn Cheese Dumplings!
