Essential Ingredients- 90g butter, softened at room temperature
- 70g sugar
- 1 egg, at room temperature
- 100g cake flour, sifted
- Pinch of salt
- 2g baking powder, sifted
- 100g chocolate chips
- 50g shredded coconut
Cooking Instructions
Step 1
Begin by creaming the room-temperature butter in a bowl until it’s smooth and soft. Ensuring the butter is not too cold will help achieve a perfect creamy texture.
Step 2
Gradually add the 70g of sugar to the creamed butter, mixing in two to three additions. Continue to mix until the butter and sugar are well combined and have turned pale and fluffy, resembling a creamy consistency. This step is crucial for the cookie’s texture.
Step 3
Once the butter and sugar mixture is well combined, crack in the room-temperature egg. Mix thoroughly until the egg is fully incorporated and the mixture is smooth. Avoid overmixing at this stage.
Step 4
It’s time to add the dry ingredients. Sift the 100g of cake flour, a pinch of salt, and 2g of baking powder together into the wet ingredients. Sifting helps to aerate the flour and prevent lumps, leading to a more tender cookie.
Step 5
Gently fold in the 100g of chocolate chips and 50g of shredded coconut using a spatula. Mix just until the dry ingredients are no longer visible. Be careful not to overmix, as this can make the cookies tough.
Step 6
Form the dough into a cohesive ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes. Chilling the dough helps to prevent excessive spreading during baking and maintains the cookie’s shape.
Step 7
Remove the chilled dough from the refrigerator. Use an ice cream scoop or a tablespoon to portion the dough onto a baking sheet lined with parchment paper, leaving some space between each cookie. Gently flatten each portion with your palm to create a cookie shape.
Step 8
Bake in a preheated oven at 180°C (350°F) for approximately 20 minutes, or until the edges are golden brown and the cookies are set. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
