Ingredients
- Soaked chickpeas, 2 measuring cups
- Curry powder, 2 Tbsp
- Parsley flakes, 1/2 Tbsp
- Olive oil, a little (for coating chickpeas)
Cooking Instructions
Step 1
First, prepare your pre-soaked chickpeas. Place the chickpeas in a pot, cover with plenty of water, and bring to a boil over high heat. Once boiling, reduce to medium-low heat and simmer for about 10 to 15 minutes. This process will soften the chickpeas thoroughly while improving their texture. Drain the cooked chickpeas completely using a sieve.
Step 2
Transfer the drained chickpeas to a mixing bowl. Add 2 tablespoons of curry powder for a rich flavor and 1/2 tablespoon of fragrant parsley flakes. Finally, drizzle a small amount of olive oil and toss well to coat the surface of the chickpeas. It’s important to mix everything evenly so that all ingredients adhere to the chickpeas.
Step 3
Spread the prepared chickpeas evenly in the air fryer basket. Cook at 160℃ (320℉) for 15 minutes. After 15 minutes, carefully remove the basket and gently toss the chickpeas to ensure even cooking. Return them to the air fryer and cook for an additional 10 minutes. This will result in delicious chickpea snacks that are crispy on the outside and tender on the inside. You can enjoy them immediately while warm, or let them cool down and store them as a healthy snack.
