  • 4-5 medium sweet potatoes (adjust based on size)
  • Plenty of cooking oil (for deep-frying)

Step 1

1. Wash the sweet potatoes thoroughly under running water to remove any dirt or debris. You can peel them if you prefer, or leave the skin on.

2. This is the crucial step for achieving your desired texture! Slice the sweet potatoes thinly for a super crispy result, or slightly thicker for a delightful ‘crispy outside, soft inside’ texture. Using a mandoline slicer will help you achieve uniform thinness, or carefully cut them with a knife to your preferred thickness, about 0.5cm to 1cm thick is ideal.

3. Pour a generous amount of cooking oil into a deep pot and heat it over medium heat. To check if the oil is ready, dip a wooden chopstick or skewer into the oil; if small bubbles start to form around it, the oil is at the optimal temperature (around 160-170°C or 320-340°F). Carefully add a single sweet potato stick to test. If it fries up nicely, add the rest of the sweet potato sticks in batches, making sure not to overcrowd the pot. Overcrowding can lower the oil temperature and result in soggy sticks.

Step 4

4. Once the sweet potato sticks begin to turn golden brown, gently stir them occasionally with chopsticks or tongs to ensure even cooking. They are ready when they turn a beautiful golden brown color and sound crispy. Be careful not to overcook them, as they can burn quickly. Remove the fried sweet potato sticks from the oil using a slotted spoon or strainer, letting excess oil drip off. Place them on a wire rack to cool slightly.
