Ingredients- 4 medium potatoes
- 3 Tbsp potato starch
- 3-4 Tbsp canned sweet corn
- 3-4 Tbsp mozzarella cheese
- A little red bell pepper, finely chopped
- 1/2 Tbsp fine salt
Cooking Instructions
Step 1
Start by shredding the potatoes as finely as possible. The fineness of the shreds will affect the texture, so thinner shreds tend to yield a crispier pancake.

In a bowl, combine the shredded potatoes with 1/2 Tbsp of fine salt. Gently mix and let them sit for 10 to 15 minutes. This salting process draws out excess moisture, which is key to achieving a crispy texture.

After salting, firmly squeeze out as much liquid as you can from the shredded potatoes. Removing excess water is crucial to prevent a soggy pancake.
