First, take out some freshly cooked warm rice from your rice cooker. Using cold rice can make it difficult to spread evenly in the pan. The trick is to spread warm rice thinly in the pan and let it cool down naturally to become cold rice.

Spread the rice thinly and evenly in a frying pan, about 20cm (8 inches) in diameter. Spreading it thinly across the bottom will ensure it cooks evenly and becomes crispy. Let it sit for about 10 to 20 minutes; it will cool slightly and adhere well to the pan.

Now, set your stove to medium heat, cover the pan with a lid, and let it cook undisturbed for about 20 minutes. I used an induction cooktop on setting 5 and waited 20 minutes while doing other things. You’ll notice a wonderfully nutty aroma as the rice begins to turn a beautiful golden brown. It’s quite fascinating!

After 20 minutes, lift the lid to check the rice’s color. Once it has a nice golden hue, carefully flip it over. Cover the pan again and let it cook for another 20 minutes. This will result in a beautifully browned Nurungji on both sides. Patience is key here!
