Ingredients- 1 piece of fresh radish (approx. 200-250g)
- 4 Tbsp pancake mix
- 5 Tbsp potato starch (or cornstarch)
- 1 Tbsp sugar
- 1/2 tsp salt
- Cooking oil, for frying
Cooking Instructions
Step 1
First, prepare the star ingredient: radish. You’ll need about 1 piece (around 200-250g). Using a blender makes grating it easy. Place the radish and 1 cup (200ml) of water into a blender and blend until it forms a smooth puree. You can also use a grater if you prefer.
Step 2
Removing excess moisture from the grated radish is key to achieving a crispy pancake. Line a sieve with cheesecloth or a fine-mesh strainer, pour in the blended radish, and squeeze out as much liquid as possible. This step prevents the batter from becoming too watery.
Step 3
Now, let’s make the delicious radish pancake batter. To the drained radish, add 4 Tbsp of pancake mix and 5 Tbsp of potato starch. For a touch of sweetness, add 1 Tbsp of sugar, and for flavor enhancement, add 1/2 tsp of salt. Combine all the ingredients and mix well until you have a lump-free batter. If the batter seems too stiff, you can add a tiny bit of water.
Step 4
Heat a frying pan over medium heat and add a generous amount of cooking oil. Once the pan is preheated, spoon about 1 Tbsp of batter onto the pan, shaping it into small, round pancakes. Cook over medium heat, flipping them to achieve a beautiful golden-brown color on both sides. Once both sides are perfectly crispy and golden, your delicious radish pancakes are ready! They taste best when served hot.
