Easy & Delicious Snack: Grilled Frozen Injeolmi (Korean Rice Cake)

Don’t let those frozen Injeolmi (Korean sweet rice cakes) from the holidays go to waste! Take them out and grill them for an incredibly delicious treat. They turn out wonderfully crispy on the outside and delightfully chewy on the inside. This recipe transforms simple frozen rice cakes into an amazing snack!

Ingredients
  • 10-15 pieces of frozen Injeolmi
  • 2 Tbsp sugar
  • 2 Tbsp cooking oil

Cooking Instructions

Step 1

First, let’s thaw the frozen Injeolmi. You can microwave them for about 1 minute and 30 seconds, or simply leave them at room temperature to thaw naturally. Once thawed, they’ll be easier to work with. Heat a non-stick pan over medium heat and add 2 tablespoons of cooking oil. Gently shake off any excess bean powder coating from the Injeolmi pieces before placing them carefully into the heated pan.

Step 2

Grill the Injeolmi over low heat, flipping them occasionally until they are lightly golden brown on both sides. When you gently press the Injeolmi and it feels soft and yielding, increase the heat to medium-high for a moment to quickly crisp up the exterior. Once the surface feels firm, turn off the heat. Immediately sprinkle the 2 tablespoons of sugar evenly over the grilled Injeolmi. (Crucially, add the sugar *after* turning off the heat to prevent it from burning and allow it to melt beautifully.)

Step 3

Finally, sprinkle the reserved bean powder (that you shook off earlier) over the top. Your delicious grilled Injeolmi is now ready to be enjoyed! For a different twist, you can also skip the sugar and dip the grilled Injeolmi in corn syrup (jocheong) or honey. Enjoy this delightful Korean snack!
