Cooking Instructions
Step 1
First, peel the potatoes and prepare them.

Using a knife, thinly julienne the peeled potatoes, or use a mandoline slicer or food processor to create uniform strands. Cutting them as thinly as possible is key to achieving a crispy texture.

Place the julienned potatoes in a bowl and gently mix with 2 pinches of salt. Let it sit for about 5 minutes, allowing the potatoes to release some moisture and absorb the salt.

Heat a pan over medium heat and add a generous amount of cooking oil. Once the pan is sufficiently hot, add the potato strands (gently squeeze out excess moisture first) and spread them out as thinly as possible to cook. Spreading them in a single layer without overlapping is crucial for crispiness.

Once one side of the potato pancake is golden brown, carefully flip it over. Be gentle to prevent the strands from breaking apart.
