This special dish, made with two fresh rockfish, features a wonderfully crispy exterior and a delightfully moist, chewy interior. Once you try it, other grilled fish simply won’t compare! The seasoning is perfectly balanced, and the tender, chewy flesh offers an increasingly savory flavor with every bite.   • 1/2 cup all-purpose flour or tempura flour

Allow the marinated rockfish to dry for two days in a well-ventilated area, such as a balcony or a spot with good airflow. They are ready for cooking when they reach a semi-dried state, which ensures a crispy exterior and moist interior.
